We are having a renew-a-thon at work this week. Each employee is gived a list of non-renewed members and we have to call them up and get them to renew. Go figure. So each day the membership department puts out goodies in the kitchen. Today it was brownies (OMG they smelled like heaven), cookies, various salty snacks and this….
This disturbing bit of food was actually strawberry jell-o, which means it had the extra effect of being all jiggly. I’m at a loss as to why it s half way gone. You eat with your eyes first people! *shudder*
Workout
Today was a scheduled 30 minute run. The boy and I headed to the gym and hopped on the treadmills. I did 40 minutes (5 warm-up/cool-down) and burned a little over 300 calories. The good news is it seems as if I am getting back some of my cardio endurance – I was going at 5.5, random level 3, and my HR only got into the 150s a few times. I bumped it up to 6.0 for the last 10 minutes.
Breakfast:
Egg whites with spinach and a pinch of cheese on SF Natures Own bread. (2)
Mid-morning snack:
I had an awesome combo of oatbran, flax, banana, and blueberries. Scrumptious. (4.5)
Lunch:
I was running so late getting back to work that I just HAD to get a salad from the deli. 😀 My salad contained all my favorites – greens, cucumbers, broccoli, kidney beans, chickpeas, carrots, celery, green peppers, onion, green peas, egg whites, and craizens topped with a little FF ranch and olive oil. I paired it with cottage cheese, a toasted pita and an apple. Very good lunch, but I ate way too late and so it wasn’t quite as filling as it should have been. (7)
Mid-afternoon Snacks:
My first snack was a Primal Strip and an apple. Later I followed it up with some soy slender with SF Irish Cream syrup. I am so going to make that combo into a smoothie. Yum! (4)
Dinner:
For dinner I tried something new –
Eggplant Rollatini with Marinara (3)
- 2 medium raw eggplant, tops and bottoms removed, sliced lengthwise into four 1/4-inch-thick long slices each
- 1 cup marinara sauce
- 1 spray(s) cooking spray
- 1/4 cup(s) minced onion
- 1 small zucchini, diced
- 1 handful spinach
- 1 large garlic clove(s), chopped (about 1 Tbsp)
- 1/2 cup(s) 1% cottage cheese, whipped
- 1/2 cup(s) parsley, fresh, chopped
- 2 tbsp basil, fresh, chopped
- 3 tbsp grated Parmesan cheese, divided
- 1 large egg(s)
Instructions
Preheat oven to 450ºF. Coat a baking sheet with cooking spray.
Lay eggplant in a single layer on prepared baking sheet and lightly coat tops with cooking spray. Bake, flipping once, until golden brown, about 10 minutes per side. Remove from oven and set aside.
To make filling, coat a large nonstick skillet with cooking spray; heat over medium-high heat. Add onion and zucchini; sauté until onion starts to brown, about 5 minutes. Stir in chopped garlic and spinach and cook 1 minute more; spoon onion mixture into a small bowl to cool. In another small bowl, combine whipped cottage cheese, parsley, chopped basil, and 2 tablespoons of Parmesan; stir to combine. Add cooled onion mixture; stir to combine. Add egg, stir to combine.
To make rollatini, reduce oven to 400ºF. Spoon 3 tablespoons of sauce in bottom of an 8- X 8-inch glass or nonstick metal baking dish and swirl to coat bottom with sauce. On a clean cutting board, place 1 slice of eggplant. Place 2 tablespoons of filling at the narrow end of eggplant and roll up; place in prepared baking dish, seam side-down. Repeat with remaining eggplant slices; arrange in a single layer in dish. Spoon remaining 1/2 cup of sauce and remaining tablespoon of Parmesan over eggplant. Bake until sauce bubbles, about 15 to 25 minutes. Yields 2 pieces of rollatini per serving.
I ended up only using 1/2 the filling because apparently my eggplants were small, not medium ;). Considering this I had 4 pieces, with broccoli and some “garlic toast”. For dessert I had some fiber one/ puffed corn/ puffed kamut with soy slender. The eggplant was really good. I was actually surprised. (6.5)

Leah – yeah, for some reason I lost touch with oat bran a few years ago. It’s good to have it back. It does have better nutritional stats than oatmeal too (more protein, more fiber).
