YAY Friday!

TGIF! I’m not sure why, but this week has just dragged on.¬† I’m so happy the weekend is here, even though I don’t think I have anything planned. ūüôā Perhaps some cleaning. Thrilling, I know.

When we went for our nightly walk tonight we stopped into K-mart to grab a drink. As we were heading to the checkout there were women yelling “Security Security.” Apparently, this man was being accused of stealing some money. ¬†The security guard ran out after him and brought him back in the store. ¬†There was a lot of arguing and¬†commotion. The cops arrived as we were walking out of the store. Quite a show.

Exercise: We headed to the gym this morning so the boy could run and I could do the elliptical.  I did 45 minutes of intervals on the Octaine Elliptical.  Nice sweaty workout.

Breakfast (452 Cal ):  Cold and rainy = oats. This morning I made Fruity Protein Oats.  My bowl contained: Oats, flax, frozen cherries, 1/2 scoop BL vanilla protein topped with blueberries, banana, peanut butter and a little soy milk.

Mid-morning Snack (256 Cal):¬† I’m almost done with this Wegmans yogurt – thankfully! My yogurt bowl contained Black cherry yogurt, frozen cherries, fiber one and almonds.

img_0725Lunch (534 Cal): I took my bike to the bike shop on my lunch break so I didn’t have time to go home.¬† I stopped by Fresh City and picked up a Organic Hummus and Veggie Sandwhich and a Farmers Market Salad (no cheese, FF dressing on the side).¬† Very tasty, I probably didn’t need all of the sandwich, but it was too good to put down. ūüė≥ I also think they put more hummus on than they were “supposed” to so I counted some extra calories for it.

Mid-afternoon Snack (166 Cal): I stopped by the store and picked up some goodies for my afternoon snack РChobani, blackberries, and Kashi GoLean.  I used to buy Kashi GoLean all the time, but stopped for some reason.  Considering you get 1/2 cup for 70 calories and 6.5 grams of protein this beats fiber one (60 cal/2 protein) hands down.

Dinner (247 Cal ): Tonight I made an old eDiets recipe: Lentils and Rice with Veggie Crumbles (I used bulgur instead of rice; added spinach; omited olive oil and onion).  I also had asparagus on the side.

Lentils and Rice with Veggie Crumbles

  • 1 tsp¬†olive oil
  • 1/2 small onion
  • 1/2 cup Morningstar Farms¬ģ Meal Starters Grillers¬ģ Recipe Crumbles
  • 1/3 cup cooked lentils
  • 1/3 cup cooked brown rice
  • 1/4 tsp. cumin
  • 1/4 tsp. garlic powder

Directions: Heat olive oil in a medium size sauce pan to medium. Chop onion and sauté together with veggie crumbles until onions are translucent. Stir in lentils, rice and spices; heat through and serve.
