… Too much.
I just got done watching the pilot of SouthLAnd (yes, from Thursday). It was really good – I love me some cop drama. Much to the boy’s dismay I think I’m going to have to season pass it. 🙂 Today wasn’t the best “eat only until satisfied” day. It started off ok, but didn’t end as well. Well, there is always tomorrow.
Exercise: We went for a 4 mile walk this morning. It was cold. We stopped by Starbucks and I got a grande Zen…. so warm… so nice. After we left, warm nummies in hand, the boy says “I love my Monday morning Starbucks” to which I replied “and your Friday one and your Saturday one.” I have to say it is a good motivation to get out there and a great way to start the week. I only burned around 258 calories, but it is nice to just walk sometimes. When we got home, even after my hands warmed up, I was having a hard time with my fine motor skills. This happens a lot when my hands are cold for a long time. Does that ever happen to you?
Breakfast (*+.5): I HAD to have a warm bowl of oats this morning. Today I took inspiration from Leanne and made some chocolate covered strawberry oats. YUMMMMMM! My bowl contained:
- 1/2 C oats
- 1 T flax meal
- 1 T unsweetened cocoa
- pinch salt
- splenda
- topped with a splash of soy milk and strawberries (cold)
This is the first time I have not added a fruit while my oats were cooking in forever. I might have to have them fruitless more often, they had a lot more texture.
Mid-morning Snack (*): I had a coupon for $1 off oikos so I thought I’d give it another shot so I picked one up on Saturday. I paired it with frozen wild blueberries, fresh strawberries, fiber one, puffed corn and shredded wheat. I was in yogurt/fruit/cereal heavan. I still like chobani more, but at least when I shop at Wegmans I can still get greek yogurt. 😉
Lunch (*+2): Day 2 of the Salad Challenge brings a Monster Mexican Fiesta salad with toasted pita chips on the side.

- FF cheddar
- Jalapeños
- MorningStar Farms black bean burger
- taco sauce
- Wholly guacamole
It was a bit much and I probably really shouldn’t have eatten it all, but it was so good. I also had a few grapes while heading back to work because I needed something sweet.
Dinner (*+2): For dinner I made a salad with beets, greens, carrots, broccoli slaw, grapes, flax oil, raspberry vinaigrette and a sprinkle of FF feta. This was the best salad I’ve had in a long time. The salty feta with the sweet grapes and dressing was FAB. Main course was baked tofu and barley risotto. For dessert (which I totally didn’t need) I had an apple, a banana, some PB2 and somehow another piece of tofu jumped on the plate.

My hands are always cold, and yes when I get back from a walk/run in the chilly weather, I can’t use my fingers for like 10 minutes!!

Well it’s good to know I’m not the only one.
I was a little sad this morning because I ate all my strawberries yesterday and I couldn’t do a repeat!
Your mexican salad looks great. I am the same way with tofu – I eat it for dinner, then as I am putting the rest away – I end up eating a ton more.

Last week I worked a track meet at school and it was freezing out!! We were outside for 4 hours and my gloves weren’t doing their job 😦 I had a clif bar in the car for afterwards, and when I got to my car I couldn’t open up the wrapper!! It was hilarious. It took maybe 20 minutes before I was warmed up enough to be able to do it!
hehe – well that’s one way to cut back on calories. 😉
